GENERAL BEEF RECIPES MEAT SECRETS
 
  • When broiling steaks, hams or chops, score the edges to keep them from warping.
  • When broiling a steak, you can rub both sides with oil so that when heated the oil will char and trap the juices inside.
  • Remove as much fat as possible on meat prior to broiling to reduce flare ups.
  • For best results, only turn meat once.
  • Do not pierce meat with a fork as it will release some of the juices.
  • It is time to turn the meat when you see small bubbles appearing on it.
 
Meat Loaf Beef Recipe
 
- 2 lbs ground beef                                                                                                                   - ¼ cup grated onion
- 1 package onion soup mix                                                                                                   - 1 ¼ cups ketchup
- 2 beaten eggs                                                                                                                         - 1 ½ cups crackers
- ¼ cup warm water
 
Meat Loaf Beef Recipe Directions
 
-         Preheat oven to 350 F.
-         Combine beef, eggs, cracker crumbs (or substitute bread crumbs), onion soup mix, water and ¾ cup of the ketchup in a large mixing bowl.
-         After mixing thoroughly, pack the meatloaf into a loaf pan and then spread the remainder of the ketchup over the top of the meatloaf.
-         Bake the meatloaf for 1 hour or until cooked through.

Porcupine Meatballs Beef Recipe
 
- 1 lb ground beef                                                                                                                             - ¼ cup uncooked rice
- 1 can of soup (cream of chicken or tomato)                                                                             - ¼ cup minced onion
- ¼ cup minced green pepper                                                                                                        - 1 tbsp salt
- ¼ tbsp pepper                                                                                                                                 - 1 beaten egg
- 1 cup water

-         Thoroughly mix the ground beef, ¼ cup of the soup, rice, onion, egg, salt and pepper.
-         Shape mixture into meatballs and brown in large frying pan.
-         Mix the remaining soup with the water and pour over the meatballs. Cover and simmer for 30 – 40 minutes or until the rice is tender.

Veggie Beef Recipe Casserole
 
- 1 lb ground beef                                                                                                                           - 1 cup chopped celery
- ½ cup chopped onion                                                                                                                 - 1 cup frozen peas
- 1 can cream of mushroom soup                                                                                              - ½ TBSP salt
- ¼ TBSP pepper                                                                                                                            - 3 TBSP milk
- 3 cups crushed potato chips
 
Beef Recipe Directions
 
-         Brown ground beef.
-         Mix peas, onions, celery, soup, salt and pepper in a large bowl.
-         Spread browned beef in bottom of baking dish.
-         Pour veggie mixture over top of beef. Sprinkle crushed potato chips over top.
-         Bake at 350 F for 30 minutes.
