Easy Lean Beef Homemade Lasagna Recipe
 
- 2 ¾-3 Cups Pasta Sauce                                - 1 egg
- 1lb Lean Ground Beef                                    - 4 cups of shredded mozzarella cheese
- 2 Cups 1% Cottage Cheese                           - 9 Whole Wheat Lasagna Noodles cooked
 
  • Brown lean ground beef in a large deep frying pan. Drain fat.
  • Add pasta sauce and mix. Take some of the ground beef sauce and line a 13x9x2 inch baking dish. Place 3 lasagna noodles over the top covering the sauce.
  • Mix the cottage cheese with one egg. Spread mixture over the layer of noodles. Place 3 more noodles over the cottage cheese mixture. Add remainder of the ground beef sauce and spread over the noodles. Place the remaining pasta noodles over the cottage cheese mixture. Cover the last layer of noodles with the mozzarella cheese.
  • Bake for an hour at 375F or until the cheese is slightly browned.

Vegetarian Homemade Lasagna Recipe
 
 
-8 Lasagna Noodle                                                       - 500 grams low fat cottage cheese
-1 egg                                                                          - 1/2 tsp salt
- 4 cups vegetable spaghetti sauce                                 -1/4 tsp pepper
-1 ½ shredded, part skim mozzarella cheese                  -1/4 tsp ground nutmeg
-2tbsp grated parmesan cheese
-2 pkgs 300 g frozen chopped spinach, thawed and well drained
 
  • Cook lasagna noodles in boiling water. Drain well and set aside
  • Combine spinach, cottage cheese, egg and seasonings
  • Spread one cup spaghetti sauce in a 13x9 inch baking pan. Place 4 noodles overlapping over sauce.
  • Add ½ spinach mixture and ½ remaining spaghetti sauce.
  • Repeat layers.
  • Sprinkle evenly with mozzarella and parmesan cheeses.
  • Bake in 350 F oven for 1 hour or until hot and bubbly; let stand 10 minutes.

Homemade Lasagna Recipe General Information:
 
  • In the cooking water place a small amount of oil to prevent noodles from sticking together.
  • Place a thin layer of sauce in the bottom of the pan before placing in the noodles.
  • Always undercook the noodles as they will continue to cook in the casserole and will turn to mush.
  • Lasagna can be frozen if placed in aluminum foil and should be reheated from the frozen state. You could spoon some tomato sauce over the top when re-heating.
