Idiyappam/ Sevai/ String hoppers

Idiyappam is a popular breakfast recipe in kerala. In tamilnadu its known as sevai.For making this appam we are pressing rice flour in noodle form and steaming it.It is good for health as it is cooking in steam.First it was very difficult for me to prepare this appam but later by practice i learned to make this appam easily.So here am giving the tips for making this appam easily which i learned from my practice



Preparation Time:20 minutes
Cooking Time:15 minutes
Servings:8-10 idiyappams

Ingredients

Rice flour-1 cup
Water-1.5 cup
Salt-as needed
Oil

Method of Preparation

  • In a bowl take water and allow it to boil for 2-3 minutes.Switch off the flame as soon as u see few big bubbles.It will be the right for the flour to cook and u will get soft dough.
  • In a vessel keep the flour mixed with salt.Add this water little by little to the flour and mix well with a spoon and make the dough
  • The dough consistency should be as shown as in the below picture
  • Now take the idiyappam maker and fill it with the dough

I used this idiyappam maker for making this

  • Close the lid and grease the idly mould with oil to prevent sticking
  • Squeeze the dough on to the idly plates in a circular motion
  • Sprinkle some grated coconut on top
  • Steam it for 10 to 15 minutes or till its done in a idly mould, Allow it to cool for a while and carefully remove the idiyappam to a serving plate
  • Serve hot with coconut milk and sugar or Stew or Egg roast as you like
