Instant Mango Pickle
There are countless versions of mango pickle in India, each region have their own style of recipe.Today i would like to share the recipe of kerala style instant mango pickle. This mango pickle is an important side dish of kerala sadhya. The combination of spiciness,saltiness and sourness of this pickle is delightful. First i thought it is  difficult to prepare pickle at home so I dont make pickle at home often and I bought few favorite brands of pickle from stores.However,after making this pickle i understood that how easy is to prepare pickle at home. This is a simple recipe which can be made by anyone with ease. Do try this recipe and let me know how it turned out for you

Ingredients

1 cup of raw mangoes,with skin,cut into cubes
Ginger-1 tbs (finely chopped)
Garlic-1 tbs (finely chopped)
Curry leaves-1 string
Turmeric powder-1/4 tsp
Chili powder- 1 tbs
Fenugreek powder-a pinch
Asafoetida-a pinch
Dry red chili-2
Mustard seeds-1/2 tsp
Vinegar-1 1/2 tbs
Oil-3 tbs
Water-1/4 cup
Salt


Method Of Preparation
  • Marinate the mango pieces with turmeric and salt for 1 hour
  • Heat oil in a pan. Splutter mustard seeds and add dry red chili and curry leaves in it
  • Reduce the flame to low then add finely chopped ginger and garlic in it and saute till the raw smell goes
  • Add redchili powder,fenugreek powder and asafoetida and saute for few minutes
  • Add salt and vinegar in it and then pour water in it and bring to a boil
  • Remove from heat and add mango pieces in it and mix well. Tate it and add salt if needed.Let it cool
  • Once it is cooled completely,store in an airtight bottle in the fridge
Note:
  • Cautious not to get the pickle in contact with water..Use only clean dry spoon to scoop the pickle from bottle. Do not use wet spoon which adds moisture to the pickle and the pickle very easily get fungus and that spoils the whole pickle
