Vegetable Cutlet / Vegetale Patties

Vegetable Cutlets or Patties is a very popular snack item made with combination of boiled vegetables and spices.It is very easy to prepare and it can be had as an appetizer or evening snack with tea. These mild spicy and crispy cutlets tastes delicious when served with tomato ketchup and green chutney. I used to prepare these vegetable cutlets whenever carrots,potatoes,beans and peas are there in my fridge, as it is very easy to prepare. Today we can learn how to make these crispy and yummy vegetable cutlets or patties


Ingredients

Poatoes-2.medium,boiled,peeled and mashed
Carrots-1/2 cup.finely chopped
Beans-1/2 cup,finely chopped
Green Peas-cooked,1/2 cup
Ginger garlic Paste-1 tsp
Green chili-1-2,chopped
Onions-1/2 cup.chopped
Turmeric powder-1/4 tsp
Redchili powder-1/2 tsp
Coriander powder-1 tsp
Garam masala powder-1/2 tsp
Bread crumbs-1/2 cup for rolling
All puropse flour/Maida-1/2 cup
Salt as needed
Oil-2 tbs for seasoning+deep frying


Method Of Preparation

  • First boil,peel the skin and mash potatoes well.Then cook green peas and keep it aside
  • Heat oil in a pan,add chopped onions,green chilies and salt in it and then saute it for few minutes
  • Add ginger garlic paste in it.Then add chopped carrots and beans in it and mix well.cook it till the vegetables are cooked well
  • When vegetables are cooked well,add cooked peas and mashed potatoes in it and mix well
  • Then add salt,turmeric powder,red chili powder,coriander powder and garam masala powder in it and mix well. Saute on a medium flame for 1 to 2 minutes
  • Turn off flame and transfer the above mixture in a large bowl
  • Mash the mixture using a potato masher or by hand.If the mixture is moist and sticky then add 1 tbs bread crumbs in it 
  • Mix everything well. check the taste and add more salt if required
  • Divide the mixture equally,make balls and then flatten it 
  • Dissolve 1/2 cup All puropse flour/maida flour in 3/4 cup water.Stir and mix this mixture to get a thick paste without any lumps
  • Now dip each cutlets in the prepared  All puropse flour/maida flour mixture so that it is well coated with maida flour mixture
  • Then roll in bread crumbs till they are evenly coated from all the sides
  • Heat oil in a deep frying pan and deep fry each cutlet till it turns golden brown in color on both the sides
  • Once it became golden brown in color.transfer it to a tissue paper for draining the excess oil
  • Serve hot with tomato ketchup or green chutney
