Roasted Onion Chicken Curry Recipe -Kerala Style. We used to prepare kerala style roasted coconut curry, in this recipe I made a slight variation to that recipe. Instead of coconut I fried onion and grinded it and mixed in this curry. This curry is more tastier than the roasted coconut curry. Fried onion enhanced the taste of this curry. One more variation I made in this curry, that is, before adding chicken pieces in this curry, I just tried to marinate the chicken pieces with all spice powders, ginger garlic paste and lemon juice then fried it. Just try to fry chicken pieces before adding into the curry, then u can feel the difference in taste. Fried chicken pieces will be more tastier than the normal chicken pieces that we are just marinating and adding into the curry. Just follow the steps that I mentioned below in making this curry. I am sure that u will also like the taste of this curry. When u don’t have coconut with u for making curry, u can just grind the fried onion and add that paste to the curry. U can try this method for any veg and nonveg curries. Let us come to the recipe

Ingredients
Chicken- 1/2 kg

For marinating Chicken pieces

Turmeric powder-1 tsp
Ginger garlic paste-1 tbs
Chilli powder-1 tbs
Coriander powder-2 tbs
Garam masala powder-1 tbs
Pepper powder-1 tsp
Lemon juice-2 tbs
Salt to taste


For making fried onion paste

Onion-2, medium size(thinly sliced)



For making gravy

Onion-2, medium size
Tomato-2
Turmeric powder-1/2tsp
Chillipowder-1tsp
Coriander powder-2tsp
Ginger garlic paste-1 tbs
Garam masala powder-2tsp
Oil-2 tbs
Salt to taste


For garnishing

Oil- 1tbs
Dry redchillies-3
Curry leaves-few


Method Of Preparation

  • Marinate the chicken pieces with all the ingredients mentioned above in “for marinating chicken pieces” and keep it aside for 30 minutes
  • Heat oil in a pan and fry the thinly sliced onion, until it turns golden brown in color
  • Once it turned golden brown in color, switch off the flame and allow it to cool down
  • Once it is cooled down, add it into a mixer and grind it without adding water in it.Now we will get the fried onion paste. Keep it aside 
  • Heat oil in a pan and add the marinated chicken pieces in to it and cook well
  • Once chicken pieces are cooked well, transfer it into a plate and keep it aside
  • Now we can prepare gravy, for this, in the same pan we cooked chicken pieces, pour little bit oil if needed. Add onion into it, add little bit salt into onion and sauté it well until onion turns golden brown in color
  • Once onion tuned golden brown in color add ginger garlic paste into it and saute it for few minutes
  • Then add turmeric powder, chili powder and coriander powder into it and sauté it well for few minutes, until raw smell of the powder goes
  • Add chopped tomato pieces in to it and sauté it well until tomatoes are cooked well
  • Next add the fried chicken pieces, fried onion paste, garam masala and salt into it 
  • Add water into it for gravy
  • Mix well. Check salt in the gravy. Add salt,if needed. Close the pan with the lid and cook it for 10 minutes
  • After 10 minutes open the lid and switch off the flame
  • Next we can do garnishing, for that heat oil in a pan and add dry red chilies and curry leaves into it and sauté it for few minutes. Add this into the gravy
  • Now the curry is ready to serve
