Schezwan Vegetable Fried Rice Recipe | Chinese Fried Rice Recipe

As I mentioned in my last post, here I am sharing a schezwan dish that is schezwan vegetable fried rice. It is an indochinese dish. It’s like normal vegetable fried only. Only one difference is ithere, that is in the favor of this fried rice. U will get the schezwan flavor in this vegtable fried rice. For getting schezwan flavor I added schezwan sauce/chutney in this fried rice. I am not adding ginger, garlic and any other sauces in this fried rice, because while making schezwan sauce we added ginger, garlic,tomato sauce and soy sauce in it. So no need to add that again into this fried rice. In my last post I explained how to make schezwan sauce/ chutney. U can refer it here schezwan sauce/chutney. Schezwan flavor will enhance the taste of this fried rice.I couldn’t take the video of preparing rice for fried rice. Hope you all know that how to prepare rice for fried rice. If you have any doubt in that, then just read the steps that I mentioned under the method of preparation. Let us come to the recipe


Ingredients

Basmati Rice- 1 cup
Onion-1(chopped)
Carrot-1(chopped)
Beans-10 (chopped)
Cabbage-1/2 cup(finely chopped)
Capsicum-1(chopped)
Schezwan sauce-2 tbs
Sailt-1tsp
Pepper powder-1 tsp
Sugar-1 tsp
Vinegar-1 tbs

Method Of Preparation

  • Start by cooking rice. Wash the rice till the water runs clear. Soak it for at least 30 minutes and cook the rice by adding water,1 tbs oil and 1 tbs salt in it. The quantity of water needed for cooking the rice should be double than the quantity of rice. Here I used 2 cup water for 1 cup basmati rice. Once the water started to boil reduce the flame and cook the rice. When the rice becomes just cooked remove the pot from fire. If you are cooking the rice in cooker then turn off the flame before the first whistle is about to come. Make sure that rice are not over cooked, Drain off the rice to a colander. Cool it completely. It is better to cook the rice overnight and keep that in fridge and use it on next day
  • Heat oil in a pan, then add onion in it and sauté it well until onion becomes transparent
  • Then add all the vegetables like carrot,beans,cabbage and salt in it and saute it for few minutes 
  • Then add capsicum in it. Mix everything well and cook it for 5 minutes
  • Then add schezwan sauce in it and mix it well. Then add cooked rice into it. Add pepper powder, salt, sugar and vinegar into it. Mix everything well and sauté it for 1 minute
  • Garnish it with spring onion.
  • Schezwan vegetable fried rice is now ready to serve
