1.Onion and garlic are strictly avoided
2. No lentil and legumes
3. Turmeric powder, Coriander powder, Garam masala powder, mustard seeds, fenugreek seeds and asafoetida are not allowed in curries
4. Common Salt won't use in curries, instead rock salt will use in curries
In this curry of arbi(taro root). we are not using any of the ingredients that I mentioned above, so it will be a good choice while taking fasting especially for north Indians. It will tastes delicious and it is very easy to prepare this curry within few minutes with very less ingredients. It goes well with rotis, puris, pulkas. Arbi or taro root is rich in fiber, anti-oxidants, minerals and vitamins, so it's good to include arbi in your diet, so let us come to the recipe
Ingredients
Arbi ( Taro Root)- 250 gm
Curd- 1 cup ( whisked)
Cumin seeds-1 tsp
Ginger- 1/2 inch (chopped)
Greenchilies-2 (chopped)
Pepper powder-1/2 tsp
Redchilli powder-1/2 tsp
Rock salt to taste
Few coriander leaves for garnishing
Oil-3 tbs
Method Of Preparation
- Peel the skin of arbi/taro root. Wash it well. Cut it into medium size pieces.
- Pressure cook arbi with little water and a pinch of salt for 1 whistle ( Do not over cook). It should be cooked, but should be firm.
- Heat oil in a pan. Add cumin seeds into it. Saute it until cumin seeds turns brown in color. Add chopped ginger and green chillies into it. Saute it for few seconds
- Add cooked arbi into it. Add pepper powder and redchilli powder into it. Mix it well and saute it for a minute
- Whisk curd well and add the whisked curd into it. Add rock salt into it and mix well
- Add 1 cup water or as required. Stir it and let it boil
- Reduce the flame to low and cook it for 3 to 4 minutes or until gravy thickens
- Finally garnish it with coriander leaves
- Dahi abi is now ready to serve
