Vendakka Pachadi Recipe | Okra / Ladies Finger Raita Recipe | Bhindi Raita Recipe with video Recipe. Pachadi is one of the must side dishes for kerala sadhya. It is a yogurt based side dish. It is a side dish curry similar to the North Indian raita. The only difference between raita and pachadi is that  in pachadi we will add coconut paste along with yogurt. We can make pachadi with different vegetables like cucumber, pineapple, bitter gourd, beetroot and okra/ladies finger. It's preparation is very simple. First we will cook the vegetable, then we will mix the cooked vegetable in coconut yogurt gravy. Finally we will temper it with mustard seeds, dry redchillies and curry leaves. This Vendakka pachadi's preparation is different from the preparation of other pachadis. In all other pachadis we will cook the vegetables and then we will mix the cooked vegetables with coconut yogurt gravy, but in this vendakka/okra pachadi we cook the okra/vendakka by frying it in oil until it turns crispy and light brown in color as okra/vendakka requires less cooking time. Fried okra pieces are mixed with coconut yogurt gravy, then we will temper it with mustard seeds, dry redchillies and curry leaves. Unlike other pachadis fried okra pieces will enhance the taste of this pachadi. so I like this vendakka pachadi more than any other pachadis in the kerala sadhya. This vendakka/okra pachadi is very easy to prepare as well as tastes delicious. Try this easy vendakka pachadi recipe for this year's onam sadhya and let me know your feedback.
