Vendakka Pachadi Recipe | Okra / Ladies Finger Raita Recipe | Bhindi Raita Recipe with video Recipe. Pachadi is one of the must side dishes for kerala sadhya. It is a yogurt based side dish. It is a side dish curry similar to the North Indian raita. The only difference between raita and pachadi is that  in pachadi we will add coconut paste along with yogurt. We can make pachadi with different vegetables like cucumber, pineapple, bitter gourd, beetroot and okra/ladies finger. It’s preparation is very simple. First we will cook the vegetable, then we will mix the cooked vegetable in coconut yogurt gravy. Finally we will temper it with mustard seeds, dry redchillies and curry leaves. This Vendakka pachadi’s preparation is different from the preparation of other pachadis. In all other pachadis we will cook the vegetables and then we will mix the cooked vegetables with coconut yogurt gravy, but in this vendakka/okra pachadi we cook the okra/vendakka by frying it in oil until it turns crispy and light brown in color as okra/vendakka requires less cooking time. Fried okra pieces are mixed with coconut yogurt gravy, then we will temper it with mustard seeds, dry redchillies and curry leaves. Unlike other pachadis fried okra pieces will enhance the taste of this pachadi. so I like this vendakka pachadi more than any other pachadis in the kerala sadhya. Ingredients

Vendakka/Okra/Ladies Finger/Bhindi-15
Salt-1 1/2 tsp
Grated Coconut-1/2 cup
Mustard Seeds-1/4 tsp
Green Chilies-2
Cumin Seeds-1/2 tsp
Coconut Oil-6 tbs
Mustard Seeds-1/4 tsp
Dry Redchilies-2
Curry Leaves-1 string
Water

Method Of Preparation

  • Cut the cleaned okra into thin slices. Add salt into it and mix it well with your hand and keep it aside
  • In a mixer add grated coconut, mustard seeds, green chilies and cumin seeds. Add enough water into it and grind it to a fine paste and keep it aside
  • Heat coconut oil in a pan. Add sliced okra/vendakka pieces into it.
  • Fry it in medium flame until vendakka pieces turns light brown and crispy. Drain the excess oil in a tissue paper and keep it aside
  • Heat coconut oil in a pan. Add mustard seeds, dry redchillies and curry leaves into it. Once mustard seeds spluttered, add the grounded coconut paste into it. Add 1/4 cup water into it. Mix it well and let it boil
  • Once it started to boil switch off the flame. Add curd and salt into it and mix it well
  • Before serving add the fried okra/vendakka pieces in it and mix it
  • Easy and delicious vendakka pachadi is now ready to serve
