How to make Egg Puffs with Homemade Puff Pastry Sheets | Easy Puff Pastry Sheet Recipe with Video Recipe. Puffs are one of the most popular snacks in the bakeries in kerala. Here I am sharing the recipe of egg puffs. It’s preparation is very simple. Wrap the hard boiled eggs and onion masala in a puff pastry sheets and then bake it. Here I baked puffs without oven, so this recipe is for the people, who wants to make puffs at home, but don’t have oven for baking puffs. Normally we will buy puff pastry sheets from shops for making puffs, but here I have explained how to make puff pastry sheets easily at home, so that you can make puffs at home even if you don’t have puff pastry sheets at your home. For making puff pastry sheets at home, you need just 4 ingredients, that are all purpose flour/maida, salt, oil and water. Just try this recipe then you can understand how easy is to make egg puffs at home without buying puff pastry sheets from shops and without oven. Once you tried this recipe I am sure that you will stop buying puffs from bakeries. Let us come to the recipe

Cooking Time:1 hour 15 minutes
Servings:6 Puffs

Ingredients

All Purpose Flour/ Maida- 1 cup
Salt-1 tsp
Oil-2 tbs
Ginger-1 tsp (Chopped)
Garlic-1 tsp (Chopped)
Greenchilies-1(Chopped)
Curry leaves-few
Onion-2 (Chopped)
Turmeric Powder-1/2 tsp
Coriander Powder-1 tsp
Redchilli Powder-1 tsp
Garam masala-1/2 tsp
Water-1/4 cup
Boiled Egg-3
Egg-1

Method Of Preparation

  • In a bowl add all purpose flour/maida and salt. Mix it well. Add water little by little and knead it into a smooth soft dough
  • Cover it with a lid & Rest it for 15 minutes
  • Dust some flour on the rolling board & Knead the dough again into a smooth non sticky dough
  • Divide the dough into 6 equal parts
  • Apply some oil on your hand and make small balls out of it (Poori size balls)
  • Drizzle some oil all over the balls
  • Rest it for 20 minutes
  • Heat oil in a pan. Add ginger, garlic, green chilies and curry leaves in it. Saute it until it turns light brown in color
  • Add onion and salt in it. Saute it until onion turns light brown in color
  • Add turmeric powder, coriander powder, redchilli powder and garam masala in it. Saute it until raw smell of powders goes off
  • Add water in it. Mix it. Close it with a lid and cook it for 2 minutes in low flame. Onion masala is ready now
  • After 20 minutes, Dough became soft
  • Apply some oil on the rolling board
  • Stretch the dough ball into a thin layer with your fingers
  • Fold it twice as shown
  • Stretch it again with your fingers
  • Again fold it twice
  • Stretch the dough again with your fingers into a square shape
  • Add the onion masala filling in the center
  • Place the half portion of egg on top of the onion masala
  • Bring together the diagonally opposite sides and seal
  • Place the sealed egg puffs on a oil greased steel plate
  • Take 1 egg in a bowl. Beat it well. Apply the egg wash all over the sealed puffs
  • Take a kadai. Add 11/2 cup salt into it. Spread it. 
  • Place a rack over it. Close it with a lid and heat it in medium flame for 10 minutes
  • After 10 minutes, Open the lid. Place the steel plate over it. Close it with a lid
  • Cook it in medium flame for 1 hour
  • Egg Puffs are ready now
