Jalebi is a traditional sweet dish that is made on every festival and special occasions.First i thought it is very difficult to prepare jalebi at home,but once i learned it from a cookery channel it was very easy for me to prepare this by myself.I am very happy that now i can prepare this delicious sweet dish by myself at home.I prepared this for this valentines day and came out successfully.I hope you will also like to pepare jalebi at home so i am sharing my recipe here.This home made instant jalebi recipe is very easy to prepare

Ingredients 

For Batter

Maida or All purpose flour-1/2 cup
Corn flour-1 tsp
Eno Fruit salt-1/2 tsp
Vinegar-1/4 tsp
Yogurt-1 tsp
Water- 7 tbs
Food color- orange or yellow


For Sugar Syrup

Sugar-1 cup
Water-3/4 cup
Lemon Juice-1/2 tbsp


Method Of Preparation

To make sugar syrup
  • Heat Pan on medium heat  add sugar and water and mix well until sugar gets dissolved with water
  • After syrup boils reduce the heat and simmer the syrup until you get one string consistency
  • Add lemon juice once you get single thread consistency on the syrup
  • Mix and keep it warm

To make Jalebi
  • Take maida flour,corn flour in a bowl and add yougurt in it and mix well
  • Then add vinegar and water in it to make a thick batter.The consistency of the batter should be thick and not watery,similar to the Idly batter .Add eno fruit salt in it and mix well.(we are adding fruit salt for quick fermentation of the batter but if you don't have eno fruit salt you can keep this batter for 8 hours for fermentation) 
  • Add food color in to it and mix well
  • Now pour the jalebi batter in to ketch up bottle or any Ziploc bag with hole in it
  • Heat oil in a pan on a  medium flame
  • Once the oil is hot enough squeeze the ketch up bottle or Ziploc bag in circular motion to form a jalebi shape
  • Fry from both the sides till the jalebi gets light golden color
  • Soak up the jalebis in warm sugar syrup for at least a minute
  • Take it from sugar syrup and place jalebi on a separate plate
  • Sweet delicious jalebi is ready to serve

Note:
  • Ensure the batter is thick enough otherwise it wont form the shape of jalebi
  • Oil for frying should be medium hot.If it is too hot then jalebi will burn
  • When piping the jalebi in to oil,you should keep the heat on low so that you can see the circles you are piping and also jalebi will rise up slowly
