Rava Idli is a varaiation of the traditional type of idlis that are made with rice and urad dal grinded together and kept for fermentation for some hours.These idlis are very  easy to prepare and do not require any fermentation or grinding.You can make it with or without vegetables.I didn't add any vegetables in it but if you want you can add grated carrots in this for giving more taste and texture.

Servings: 10 Idlis

Ingredients

Rava/Sooji-1 cup
Yogurt/Curd-1/2 cup
Mustard seeds-1/2 tsp
Urad dal-1/2 tsp
Chana dal-1/2 tsp
Asafoetida/hing-a pinch
Curry leaves-5-6
Ginger-1 inch piece finely chopped
Green chilies-2 finely chopped
Bakiing soda-1/4 tsp
Salt to taste
Oil or ghee-1 tbs

Method Of Preparation
  • Heat Oil/Ghee in a pan
  • Add mustard seeds when they start to crackle,add asafoetida ,urad dal and chana dal
  • Saute until dal turns light brown
  • Add curry leaves and saute for a minute
  • Add rava and mix well
  • Roast it on medium flame until it turns light brown.stir it continuously and don't burn the rava
  • Turn off flame and transfer it to a bowl and allow it to cool
  • Add Yogurt/Curd in it 
  • Add green chilies ,chopped curry leaves and ginger in it and mix well
  • Add little water to make a smooth but thick batter,The batter should be thicker than the normal idli batter
  • Let the batter rest for 15-20 minutes
  • After 15-20 minutes add baking soda and salt in it and mix well
  • Pour the batter on a greased idli moulds and steam it for 15 minutes 
  • After 15 minutes turn off flame and remove the molds from the steamer,when it cools down remove the idli from it
  • Soft and fluffy Instant rava idli is ready to serve hot with chutney/chutney powder or sambar
